Homemade Mincemeat recipe
Ingredients:
1 lb of beef neck.
½ lb of suet.
2 lbs of tart apples, pared and cored.
2 ½ cup of sugar.
2 ½ cup of dried currants.
4 ½ cup of raisins.
½ cup of mixed candied fruits and peels, chopped.
1 ½ teaspoons of grated lemon peel.
¼ cup of lemon juice.
1 cup of orange juice.
2 ½ cup of water.
1 ½ teaspoon of salt.
½ teaspoon of mace.
Directions:
In a stew pot, cover the beef neck with water and cook until the meat is tender (about 3 hours).
Drain and cool. Either discard the beef broth or save it to be used for something else.
Put the meat, suet and apples through a meat grinder.
In a large kettle, blend the meat and apple mixture with all of the remaining ingredients.
Cover and simmer for about 60 minutes.
Yields 12 cups of mincemeat.
